From my (now ancient) notes, you should be able to build a servicable
cable with hardware handshaking capability from the info below.
 

Apple //c 5 pin DIN                 DB25                  DB9 "AT" style

1 (1) DTR   Data Terminal Ready  -> 6  DSR                6  DSR
2 (4) TD    Transmit Data        -> 2  RX                 2  RX
3 (2) GND   Signal Ground        -  7  GND                5  GND
4 (5) RX    Recieve Data        <-  3  TD                 3  TD
5 (3) DSR   Data Set Ready      |-> 20 DTR                4  DTR
                                |AND 5 CTS Clear To Send  8  CTS  

My notes remind me that some 5 pin DINs have non-sequential numbering.
These numbers are in parentheses.
